- 2 slices whole-grain bread
- 1/2 ripe avocado
- 2 large eggs
- 1 tsp lemon juice
- Red chili flakes, salt and pepper
- 1 tsp white vinegar (for poaching)

Toast the bread until golden and crisp.

Mash avocado with lemon juice, salt and pepper, then spread on toast.
