Ingredients
- 150g chicken breast
- 60g quinoa (dry)
- 150g sweet potato, cubed
- 1/4 avocado, sliced
- 1 cup baby spinach
- 6 cherry tomatoes
- 1 tbsp olive oil
- 1 tsp lemon juice
- Salt, pepper, paprika
Instructions

Cook quinoa in 120ml water for 15 minutes until fluffy.

Roast sweet potato cubes at 200°C / 400°F with 1 tsp oil for 18-20 min.

Season chicken with salt, pepper and paprika, then grill 6 min per side.

Slice the chicken and assemble bowl with quinoa, sweet potato, spinach, tomatoes and avocado.

Drizzle with remaining olive oil and lemon juice.
